最近、紹介され天草から送っていただいている「ゴリラ真鯛」

高級養殖ブランドと同じ名前を持つこの真鯛ですが、こちらは天然物。その名前の由来はゴリラのようにマッチョな外見から来ています。

今回手に入れたゴリラ真鯛は7.8キロサイズ。

熟成をかけなくても、旨みがあり、身質と脂のバランスが良いです。
寝かしをかけて、どう変化していくか楽しみです。

Recently, I was introduced to and received shipment of the "Gorilla Madai" from Amakusa.

This sea bream shares its name with high-end aquaculture brands, but this one is wild-caught. The name comes from its muscular, gorilla-like appearance.

The Gorilla Madai I acquired this time weighed 7.8 kilograms.

Even without aging, it has a rich flavor and an excellent balance between texture and fat.
I'm looking forward to seeing how it changes as it is rested.
